Today, most of the country's food already comes from California and the Midwest. It's fresher than it's ever been and is feeding people just fine. Sure, folks can spend $10 for a bushel of corn at their local farmers market, or get a bushel at their supermarket for $3; more than 3x the amount is sold in supermarkets than specialty stores.

Double-digit growth rates are nothing when you're starting at almost nothing.
